Meal-Prep Updates

Hey there friends,

1 month down, 3 more to go before graduations! In the past five weeks, Connor and I have embarked on our final semester [insert holy angels proclaiming Hallelujah here]. I’m really enjoying this semester and am pleased to report that I have been following through with {most} of the goals set in the previous post. For starters, meal prep, y’all. It’s a thing. We’re doing it. & I feel proud. Below are a few meals I’ve cooked up in January.

–> bell pepper “nachos”

–>burrito bowls

–>protein pancakes with vanilla Greek yogurt

Add fresh fruit as a topping or even in the pancakes. You can’t tell but the one not topped bananas has them inside the pancake!

We’ve made a few more things, but honestly I just forget to take pictures. The most important part of this whole meal-prep business is to make enough for multiple meals. In all of the meals above, we made extra of everything and kept it in the fridge or have even frozen it (like the pancakes which take 30 seconds in the microwave in the morning – so easy!). I highly recommend trying out cauliflower rice as a carb replacement. Don’t get me wrong, you still need to eat carbohydrates, but if you’re like me, you like a LOT of food. So mix half brown rice (or whatever you want) with half cauliflower rice for a healthy, filling meal. I buy it frozen and just sautee it in a pan with a variety of spices.

Are there any meals you’ve wanted to try lately? I find most of my ideas on Pinterest and google. I’m thinking about doing a steak, red potato, and veggie bake soon. Feel free to send any recommendations my way! For the most part, Connor and I look for something EASY, delicious, and not too expensive. #loanlife

That’s it for now. I am off to a 3-hour lecture on the legal intricacies of HEALTH INSURANCE! (wahoo.)
